Pizza Omelette

 

Happy Tuesday Folks, and welcome back to Damgoodcooking.com!

Every time we cook, we usually make quite a bit extra, for example; if we make spaghetti, Chipotle sauce, or in this case – Pizza Sauce, there will also be some left over to try with different foods.

When I got up this morning, I was in the taste for an Omelette, so as I open the fridge, the first thing I seen was the left over Pizza Sauce from the day before and the light bulb went off in my head.  “Make Pizza Omelettes!”

Here’s what you will need!

Eggs

Onions

Green Peppers

Red Peppers

Jalapeno Peppers

Pepperoni (which is not shown in none of the photos… Why?  Because I ate the last few as a late night snack!

I used the Cilantro for a different type of taste…. well honestly I used it because I’m a firm believer in not letting food go to waste.   We use to have  a tendency of buying certain things for certain recipes, end up with a ton of it left over – and it goes to waste.  Since we just recently used it for our Chipotle sauce Recipe, I figured why not toss it in the Omelette!

I’m not going to be so specific with this recipe, we don’t really do the 1 cup or this, 2 table spoons of that!  you know what you like, so follow your heart, or better yet, Gut!

Here’s everything prepped.

Get your pan on the burner with olive oil and set to medium, once its nice and warm – drop and spread out your eggs.

FYI, I usually use two eggs per adult, sometimes three if your hungry.

Let the eggs sit without touching for about 4 to 6 minutes and add your vegetables.

After adding the vegetable, try to split evenly if using the same pan – and flip from the dryer side of the eggs to the wet and let sit for another 4 to 6 minutes.

After this flip again carefully to prevent from breaking.

Once again, let it sit for 4 to 6 minutes

Now ladies and gentleman, this may not look like a perfect shaped omelet, nor am I a perfect omelet looking maker, I can’t tell you how hard it is to take photos and prepare food while starving at the same damn time.  After all, when it comes to food – its not always important the way it looks but the way it taste, which I guarantee it fantastic!
