Mango Salsa!

I know you guys are use to reading recipes from Dave the D in DAM Good Cooking. but today I had to take over.  Honestly, since we have both been so busy this recipe has been sitting on my computer for quite some time…

Since the Chipotle Mild Sauce was such a hit, I decided to do a remix with a Mango and crushed red peppers.

I have to say this was even better then the Chipotle Salsa and was a hit with Dave as well. Dave doesn’t really like Mangos, but mixed with the Red Onions, Greens Peppers, Lime, Salt, Pepper, Crushed Red Peppers and Tomatoes, he could hardly taste the Mangos. It added the sweetness to the salsa while making it a great balance to the other ingredients.

Then we just added the salsa to our left over BBQ chicken tacos.

Yum Yum Yummy!

Mango Salsa 1 (1 of 1)

What you will need:

  • 1 Cup Tomatoes
  • 1/4 Cup Red Onions
  • 1/4 Cup Green Pepper
  • 1/2 Mango
  • 1/2 Lime Squeezed
  • 1 tsp Salt & Pepper
  • 1 tsp Crushed Red Peppers
  • 1 TBSP Extra Virgin Olive Oil

Mango Salsa 2 (1 of 1)

Chop your ingredients up and add them to the bowl.

Mango Salsa 3 (1 of 1)

Mango Salsa 4 (1 of 1)

Mango Salsa 5 (1 of 1)

Squeeze half the lemon in the bowl.

Mango Salsa 6 (1 of 1)

Add Salt, Pepper and Red Crushed Peppers (if you want it more spicy add more crushed peppers, but be careful even a little bit can make your mouth hot)

Now mix all the ingredients together!

Mango Salsa 7 (1 of 1)

I would suggest leaving the salsa in the fridge as long as you can. The longer the better of course, but 60 mins will work.
