Hello Guys and welcome back to http://DAMGoodCooking.com – as we know, one of the most important meals of the day is breakfast – and its also one of my favorites! The only thing I hate about breakfast, is after awhile it all start tasting the same. Its only so many different ways you can make eggs, so I look for different things to incorporate with it for a unique different taste.
Here we have some potatoes that where grilled the night before (Left overs from yesterdays dinner), some onions, tomatoes, green peppers, eggs, and cheese.
First start off by chopping up your vegetables and get them to a skillet with a little olive oil and heat up on medium. Normally we would toss this type of stuff in our Wok, but I was feeling a bit lazy to pull it out and clean afterwards =) We all have out lazy moments in life. I didn’t add the tomatoes, I prefer them cold on the eggs instead. but have it as you like!
While this is heating/cooking, get your eggs to a skillets and get to scrambling. Mid way through cooking your eggs – add your cheese. Shredded cheese is actually preferred, but we ran out so I have to improvise.
Once every thing is done, time to serve.
A slightly different but delicious way to have your most important meal of the day. ENJOY!
